Maison Lallier: The art of Champagne through a century of history

The history of Maison Lallier between tradition and modernity

The Lallier family legacy, passed down from generation to generation, began in 1906 with René Lallier, founder of the Maison. Since 1938, the tradition has been carried on by Jean Lallier and, subsequently, until 1990, by James Lallier, creator of Champagne Blanc de Blancs, still today the flagship of the collection.

In 2004, Lallier was acquired by renowned winemaker Francis Tribaut, who, refining the Maison's winemaking philosophy, guided the brand towards a season of growth and innovation.

The acquisition by the Campari group in 2020 represented a crucial moment: with the appointment of Dominique Demarville as General Director and Chef de Cave, Lallier enters a new era. Demarville's contemporary vision, with its eco-responsible approach and perfectly in tune with the style of the Maison, has led to the creation of new blends, maintaining a strong link with tradition but with an eye towards the future.

Terroir and winemaking excellence

Linked to the prestigious terroir of Aÿ, Lallier owns 15 hectares of vineyards distributed in some of the most renowned Grand Crus and Premier Crus in the Region, including Avize, Chouilly, Cramant, Mesnil-sur-Oger, Oger, Verzenay and Verzy. These vineyards, which represent 40% of the total supply, are dedicated exclusively to the Maison's signature vines, namely Pinot Noir and Chardonnay.

Lallier farms its vineyards with sustainable viticulture methods, promoting biodiversity and demonstrating a strong commitment to environmental values, as evidenced by the Haute Valeur Environnementale (HVE) certification.

The goal is to enhance what nature offers, expressing the unique personality of each single vintage. This responsibility translates into a deep attention to detail and a reverential respect for the terroir and its peculiarities, so that it can fully express its most authentic character.

hdlallier2-090-ok-2.jpgLikewise, the Maison's oenological approach is in constant search of excellence, a Haute Couture winemaking that combines modern techniques with those of the oldest tradition while preserving its distinctive style. Each phase of the process, from the selection of the grapes to the fermentation, refinement and final assembly, is carried out with extreme care and precision.

Using exclusively Pinot Noir and Chardonnay grapes, the base wines are vinified separately in temperature-controlled stainless steel vats. The fermentation takes place with self-produced yeasts and the malolactic fermentation is carefully guided to preserve the freshness of the wines. The addition of a small percentage of vin de réserve (around 20%) is the creative touch of the Chef de Cave to guarantee the blend an enveloping intensity and creaminess. The added dosage is minimal to respect the intrinsic qualities of each Champagne, enhancing its personality.

The Lallier Champagne collection

Each Lallier Champagne represents a unique chapter in the history of the Maison, a sensorial experience resulting from the harmonious interaction between the mutability of nature, solid winemaking tradition and incessant spirit of innovation. Each bottle is the reflection of the creative vision of Dominique Demarville (Chef de Cave) and his team, who skillfully combine these elements in a richness able of transporting the taster on a sophisticated and engaging journey, where each sip reveals a new and fascinating tale.

Among the Champagnes of the Lallier collection, the Champagne Blancs de Blancs stands out, an elegant union of Chardonnay from the Grand Cru of Aÿ and the Côte des Blancs; the Champagne Blanc de Noirs, which celebrates the Maison's passion for Pinot Noir from the Grand Crus of Aÿ and Verzenay; and the Champagne Rosé, a sumptuous blend of Pinot Noir and Chardonnay with a touch of Pinot Noir from the Bouzy Grand Cru, vinified in red.

To complete, the Champagne Réflexion is the Chef de Cave's annual interpretation that challenges the concept of “Champagne Brut Non Vintage”, capturing the essence of Lallier style and vision. Launched in 2010, the Champagnes in the collection reflect the balance between purity and freshness, depth and intensity, obtained through meticulous vinification in wood and long aging on the yeasts.

The most prestigious creations

image-3.pngAmong the most prestigious creations of Maison Lallier, the Millésimé represent an extraordinary selection of vintage Champagne, produced since 1999. The latest releases, the Millésimé 2014 and Millésimé 2012, capture the unique nuances of each vintage, enhanced by the savoir-faire of the Maison.

The Champagne Ouvrage reflects all the creativity of the Chef de Cave, combining the best Pinot Noir and Chardonnay grapes from two Grand Cru parcels: Les Hureaux in Oger for the Chardonnay, and Les Meurtets in Aÿ for the Pinot Noir.

Standing alongside are the Champagnes Loridon and Les Sous, authentic celebrations of the savoir-faire and magnificence of the Grand Cru Parcellaire of Aÿ. Aged for at least 5 years and Extra Brut dosage, the Champagne Loridon, 100% Chardonnay, stands out for its purity, precision, freshness and minerality; Champagne Les Sous, 100% Pinot Noir, with its richness and structure offers a full and satisfying tasting experience.
