Stroebel (Timothée)

Timothée Stroebel is a young and talented vigneron who has been passionately producing exceptional and extraordinary Champagnes based on organic farming since 2008. The origin of the Stroebel family in the Champagne region dates back to the 1930s when Timothée's grandfather, originally from Alsace, settled down in the village of Villers-Allerand - classified as Premier Cru - in the Montagne de Reims and decided to produce Champagne. In the 1960s, the family Domaine was inherited by his two sons: Timothée's father was the sole co-owner of the vineyards and his uncle who was responsible for the production of Champagne, as an experienced vigneron.

 After studying oenology at Beaune, Timothée subsequently vinified 4 vintages at the Domaine Jérôme Billard in the Hautes-Côtes de Nuits in Burgundy. It was only in 2008 that he began making wine from the grapes of his own vineyards, already practising the principles of organic viticulture. In order for the terroir to recover its deepest roots and benefit from organic cultivation, he continued the very long transition phase of 10 years already started by his uncle before applying for the certification of organic Champagne production in 2014.

 The vineyards of Domaine Stroebel are all located near Villers-Allerand, but the plots differ greatly in soil components: around 1.5 hectares of Meunier are scattered among deep, clayey soils; another 0.5 hectares of the same variety are rooted in light, filtering sandy soils. Timothée Stroebel quickly had the intuition that these two different plots could be complementary in their differences and therefore decided to vinify them separately. 

The grapes of the clayey soils produce round, fleshy notes, while the vineyards of the sandy soils have a rather straight style. Fermentation and vinification take place in old oak barrels from Chassagne-Montrachet, with little sulphur and malolactic fermentation, no filtration or stabilisation to maintain freshness and creaminess. Listening and sensitivity, compromise and perseverance, patience and poetry... These are some of the Timothée's ingredients to make unique Champagnes.
