Vigneron's family for five generations, since 1995 the Domaine William Saintot has been managed by William's daughter, Nathalie, and since 2008 the grandchildren Gwenn and Morgan have joined the family adventure. In 2016, Gwenn decides to take other paths, leaving the entire direction to her mother Nathalie and her brother Morgan. The important commitment to sustainable agriculture has allowed the Domaine to obtain the "HVE - Haute Valeur Environnementale" certification since 2014 and the "Viticulture Durable en Champagne" certification since 2016 and currently it's in organic conversion.
Domaine William Saintot is also known to be one of the few exporters of Pinot Noir cuttings, mainly in Italy. The Domaine is located in Avenay Val d’Or, in the Vallée de la Marne and has a vineyard area of 10.27 hectares divided into different plots in the Premier Cru villages of Avenay Val d’Or, Mutigny, Bisseuil. The main vines are represented by Pinot Noir (85%), Chardonnay (12%), Meunier (2%) and a small part by Petit Meslier (1%), one of the 4 cépage oubliè, or the “forgotten vines".
Each grape variety reflects the characteristics of the specific territories of the Vallée de la Marne: Avenay Val d'Or is hilly and enjoys a south-east to south-west exposure, its soils are deeply fragmented clayey-calcareous and the result is vinous Pinot Noir; the medium-deep clay and a compact chalky component give minerality and freshness to the wines produced from the vines planted in Bisseuil; while the soil of Mutigny, characterized by silt, gives the wines a note of lightness.
To highlight the typical characteristics of each terroir, the vinification is done for individual plots and mainly in fûts de chênes (about 85% of the grapes harvested), or in characteristic ovoid vats or in steel tanks; fermentations are spontaneous with indigenous yeasts.
